Thai Style Tofu

2 packs extra firm tofu, drained and excess moisture removed
20g thai basil, stems finely chopped and leaves roughly chopped (reg basil is fine)
5 garlic cloves, finely chopped
1/2 - 1 chilli, finely chopped, or any spicy pepper
6 tablespoons soy sauce
1 tbsp sugar, to taste
3 tsp cornflour mixed with 10 tbsp water

Method
1. Preheat the oven to 400. Line a large baking tray with baking paper and add 1-2 tbsp of oil. Place the tofu on the baking tray. Put in the oven for 25-30 minutes, or until golden brown and crispy. Will take longer probably. Important to get crispy enough.
2. In a medium sized frying pan over a low-medium heat add 1-2 tbsp of oil. Once the pan is hot, add the chopped garlic, chilli and thai basil stems. Cook until golden, about 2 minutes. Stir often.
3. Add the tofu into the pan. Then add the soy sauces, sugar and cornflour mixed with water.
4. Increase the heat to medium. Cook until thickened and stir constantly. It should take a couple of minutes.
5. Stir in the thai basil leaves. Enjoy!
