One Pan Broccoli Cheddar Orzo

* 1 tbsp olive oil
* 3 garlic cloves, minced
* 1 small onion or 2 shallots, finely chopped
* 1 1/4 cups orzo (gluten-free if needed)
* 2 1/2 cups chicken broth (can sub veggie broth)
* 2 cups broccoli florets
* 1 cup shredded cheddar cheese
* Salt and pepper to taste
Directions
1. Heat the olive oil in a large pan over medium heat. Add the onion and garlic, and sauté until fragrant.
2. Stir in the broccoli, orzo, and chicken broth. Bring to a boil, then reduce the heat to low, cover, and let simmer for 10 minutes.
3. Stir in the cheddar cheese until melted and creamy. Season with salt and pepper to taste.
4. Optional: Sprinkle extra cheese on top and broil for a minute or two for a golden, bubbly finish.
