Mom’s Irish Cookies

Ingredients

2 egg whites

½ tsp cream of tartar

¾ cup of sugar (fine baker’s sugar works very well)

½ tsp vanilla

3 drops of green food coloring

1 (6 oz) package of mint chocolate chips

Directions

Beat egg whites and cream of tartar until stiff. Add sugar slowly and beat until glossy. Add vanilla and food coloring. Add a pinch of salt. Fold in mint chips. Drop on a slightly greased cookie sheet or cover cookie sheet with parchment paper. Preheat oven to 250 degrees and bake for 20 minutes, until edges are lightly brown.
