Irma's Frosted Eggnog Logs

Ingredients

3 cups all-purpose flour

1 tsp ground nutmeg

1 cup butter

3/4 cup sugar

1 egg

2 tsp vanilla

1 tsp rum flavoring

Rum frosting:

3 Tbsp softened margarine or butter

1/2 tsp rum flavoring

1/2 tsp vanilla

1/2 cup sifted powdered sugar

2 to 3 Tbsp evaporated milk, cream, or milk

Directions

Stir together the flour and nutmeg in a mixing bowl. Beat butter in a large mixer bowl for about 30 seconds. Add sugar and beat until fluffy. Beat in egg, vanilla, and rum flavoring until combined. Add dry ingredients and beat well.

Shape dough into 3-inch long logs, about 1/2 inch wide. Arrange logs on ungreased cookie sheets. Bake in a 350-degree oven for 15 to 17 minutes or till golden. Remove from oven and cool on wire racks.

Rum frosting: In a mixer bowl, beat together 3 Tbsp softened margarine or butter, 1/2 tsp rum flavoring, and 1/2 tsp vanilla. Beat in 1/2 cup sifted powdered sugar. Gradually add more sifted powdered sugar (about 2 cups) and 2 to 3 Tbsp evaporated milk, cream, or milk, beating till the frosting spreads easily. Tint frosting with food coloring, if desired.

Prepare the rum frosting. Spread over tops of cooled cookies. Mark the frosting lengthwise with tines of a fork to resemble bark. Sprinkle frosting with additional nutmeg.

Notes

Nutmeg and rum flavoring make the frosting taste like eggnog.
