Tofu Pibil Tacos

For the tofu:
1 block/400-500g extra firm tofu
2 tbsp tamari (or soy sauce)
1/2 tsp paprika
1/2 tsp msg
1/2 an onion, peeled & roughly chopped
2 garlic cloves, peeled
30g achiote paste
1/2 tsp cumin
1/2 tsp oregano
4 cloves
juice of 1 orange
juice of 1 lime
for the pickle:
half a red onion, thinly sliced
juice of 1 lime
Directions
1. Grate your tofu then add it to a baking tray with the paprika, tamari, msg & a drizzle of oil, toss to coat then bake at 200°C for 25-30 minutes until golden & crispy in parts (you want various textures)
2. Meanwhile, toast the cumin, oregano & cloves in a dry pan until fragrant then add to a blender with the onion, garlic, achiote paste, lime juice & orange juice & blitz until smooth
3. When the tofu is cooked, pour over the marinade, stir so everything is coated then cover with foil & return to the oven at 160°C for another 30 minutes
4. Meanwhile, add the red onion to a bowl with the lime juice, mix & set aside to pickle
5. When the 30 minutes are up, give the tofu a mix then serve up atop tortillas with sour cream, coriander, pickled onion & a squeeze of lime
