MUSHROOM AND KALE STARBUCKS EGG BITES

Ingredients

10 eggs

2 cups 4% fat cottage cheese

1 tsp kosher salt (cut in half if using regular salt)

1/2 tsp ground black pepper

1/2 tsp garlic powder

1 cup finely chopped kale

6-8 baby bella mushrooms, finely chopped

2/3 cup shredded cheddar cheese

Directions

Preheat the oven to 300F and grease a muffin tray generously with oil, or line with silicone muffin liners.

Blend the eggs, cottage cheese, salt, ground black pepper, and garlic powder in a blender or food until completely smooth, about 60 seconds.

Add the chopped kale, mushrooms, and shredded cheese, evenly among the muffin tin and pour in the egg mixture, filling each one just about to the top.

Bake for 40-50 minutes, until a toothpick comes out clean. Note: If you are using an egg mold, add the mold to a separate, larger pan with an inch of water.

Cool completely in the pan before removing from the tin and days.
