Everything But The Bagel Smoked Salmon Quinoa Bowl

Ingredients

2 x 250g Cooked Quinoa

20g Chives

25g Parsley

15g Dill

1 Cucumber

1 Red Onion

200g Smoked Salmon

2 Tbsp Toasted Sesame Seeds

1 Tbsp Poppy Seeds

2 Lemons

150g Soured Cream

3 Tbsp Capers

Directions

Thinly slice the chives and parsley, then transfer to a bowl. Set aside.

Combine the poppy seeds, soured cream, zest of half a lemon and a squeeze of juice in another bowl, to make a dressing. Season with salt and pepper.

Pick the dill fronds. Chop the cucumber and thinly slice the red onion. Dice or tear the smoked salmon into bite-sized chunks. Add everything to another bowl with the juice of a lemon, then stir the sesame seeds through and add a drizzle of olive oil. Toss together with the capers.

Reheat the quinoa and toss through the chive and parsley mixture.

Share the quinoa between plates. Top with the smoked salmon salad and drizzle over the lemon poppy seed dressing.
