Parmesan Chicken Bites

1/2 cup vegetable oil + more as you cook (2 cups)
4 breasts boneless, skinless chicken breasts (cut into 1-inch chunks, not too thick)
Kosher salt and freshly ground black pepper (to taste)
2 1/5 cup Panko*
2/3 cup freshly grated Parmesan
5 teaspoon garlic powder
1 1/4 teaspoon smoked paprika
2/3 cup all-purpose flour
4 large eggs (beaten)
Directions
Season chicken with salt, to taste.
In a large bowl, combine Panko, Parmesan, garlic powder and smoked paprika; season with salt and pepper, to taste. Set aside.
Before heating oil, coat the chicken in flour, then dip into eggs, then dredge in Panko mixture, pressing to coat. Set aside on a platter.
Heat vegetable oil in a large skillet over medium heat.
Add chicken to the skillet in 1 layer, and cook until evenly golden and crispy, about 3-4 minutes. Flip halfway through or as needed. Transfer to a paper towel-lined plate.
Serve immediately, garnished with Parmesan, if desired.
