8 cups seafood shells
(Crab, shrimp, lobster,mussels etc)
1/2 cup white wine
1 tbsp sherry
1 onion
1 celery stalk
1 carrot
2 garlic cloves
10 peppercorns
Bay leaf
Sprig each rosemary and thyme
1 tbsp tomato paste
1/2 tsp old bay
Season salt to taste
Squeeze of lemon
Directions
Roast shells at 400* for 10 minutes
Add to big pot
Add water to cover by 1 inch
Simmer covered 1 hour. Scoop any foam off. Don’t boil
Add all other ingredients
Simmer 1/2 hour
Strain and reduce if needed
