Gather
1 red onion, grated
Handful of fresh parsley (approx 30g), chopped
Handful of fresh mint (approx 30g), chopped
1 medium egg
100g breadcrumbs
500g beef mince (I used 20% fat)
1 tsp dried oregano
Salt and pepper
Olive oil for shallow frying
Directions
1.) Start by grating the red onion and add to a bowl. Then finely chop the fresh parsley and mint and add to the same bowl.
2.) Add the egg, breadcrumbs, beef mince and seasoning along to the bowl and mix until well combined.
3.) Take about a tablespoon of the mixture and flatten. Then smooth the edges using the palm of your hand to form a flat burger shape. Repeat this with the remaining mince meat.
4.) Over a high heat, add the olive oil to a frying pan. After 2 minutes, or until it’s heated up (you can test this by poking a wooden spoon in the oil and seeing if it fizzes up around it), carefully place the burgers.
5.) Cook for 3-4 minutes on both sides until crispy and golden.
6.) Once cooked, place on a plate lined with kitchen roll to drain the excess oil.
