This blackened chicken is delicious on salads, sandwiches, pasta, in a protein bowl, flatbreads and absolutely on its own. It’s my favorite way to meal prep chicken too.
Season your chicken, sear it in a cast iron on one side. Once you can easily lift it and flip it, transfer the pan into the oven to finish roasting. The chicken itself takes 20 minutes max. I like to let the chicken rest for about 5 to 10 minutes while I whip up a quick pan sauce with all those extra delicious seasonings and juices that are left in the pan.
