Pecan Chicken Salad

3 cups diced cooked chicken
3 celery stalks, diced
1 small onion, diced
3/4 cup peccan halves
1/2 cup mayonnaise
1 tablespoon Dijon mustard
Salt and pepper
Watercress, for serving
Directions
Combine the chicken, celery, onion, pecans, mayonnaise, and mustard in a large bowl and toss gently until every piece is coated.
Season with salt and pepper. Serve over watercress.
Notes
Dolly says: "When there's leftover chicken in the refrigerator, it's a good chance to make something quick like this salad--just toss everything together and eat it straight up or spread between two slices of bread."
