Rhubarb Compote

◦2200g rhubarb
◦300g sugar
◦200g orange juice
◦2pc cinnamon stick
◦2pc star anise
◦6g cornstarch
Directions
1. rough chop rhubarb into large pieces
2. juice 200 g or orange and reserve zest for sachet
3. make a sachet with star anise, cinnamon sticks and orange zest
4. combine rhubarb, sugar, orange juice, and sachet in pot.
5. cook over medium heat until rhubarb is just soft
6. blend ingredients in robocoupe with cornstarch
