Chicken Tinga

Ingredients

4-5 chicken breasts

5 yellow onions, thinly sliced

1 small can chipotle peppers

5-6 cloves garlic, minced

3 roma tomatoes, chopped

8 oz tomato sauce

Salt and pepper

Italian seasoning

Olive oil

Radishes

Sour cream

Shredded parmesan cheese

Lettuce or cabbage

Tostadas or tortilla chips

Directions

Boil the chicken until done. Add salt and pepper to the chicken while it is cooking. Shred chicken.

In a large skillet, heat olive oil. Add onions and garlic and cook until soft. Add tomatoes and tomato sauce, salt, and pepper to taste. Cook until well blended and soft. Add chipotle peppers in blender with reserved chicken broth. Blend and add to tomato mixture along with chicken. Add Italian seasoning and cook until heated well.

Notes

Serve with lettuce, cheese, sour cream, and radishes on top.
