Filipino style chicken and rice

Ingredients

Boneless chicken thighs

Baby bok choy

Scallion or onion

Jasmine rice

2 Tbsp Rice vinegar

3 Tbsp Soy sauce

Small can coconut milk

Maple syrup (2 tbsp)

Spice blend (salt, brown sugar, white sesame seeds, garlic powder, sunflower oil, ginger, black pepper)

Directions

Rub chicken with half the spice blend

Cook in a pan (about 6 minutes)

Once cooked remove from pan

Then add onions sautée until fragrant

Add boy choy and 1 tbsp of water and other half of spice blend until wilted

Remove bok choy

Add soy sauce maple syrup and vinegar. Cook. Then add cooked chicken and coat with sauce
