Fried Onion Gravy

1/2 cup bacon drippings or vegetable oil
4 medium onions, sliced
Directions
Melt the bacon drippings in a large, heavy skillet over medium heat.
Add the onions.
Cook, stirring occasionally, until the onions begin to brown, about 5 minutes.
If they brown unevenly or start to burn, lower the heat.
Add enough water to cover the bottom of the pan, reduce the heat to low, and stir until the onions return to a simmer.
Continue stirring until the water has evaporated.
Continue to cook, adding water again to cover the bottom of the pan, and stirring. The onions will begin to take on the consistency of gravy.
Gradually add 3/4 cup more water, stirring, until the gravy is thickened. Striain if you like, or serve slightly chunky.
