One-pot Chicken and Pasta with Mozzarella

2 chicken breasts, diced
8 oz pasta (penne or rotini)
2 tbsp olive oil
2 garlic cloves, minced
1 can (14.5 oz) diced tomatoes
1 1/2 cups chicken broth
1 1/2 cups shredded mozzarella cheese
Salt and pepper to taste
Fresh basil for garnish (optional)
Directions
Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned and cooked through.
Add minced garlic and cook for 1 minute.
Stir in diced tomatoes, chicken broth, and pasta. Bring to a simmer, then cook until pasta is tender and the liquid is mostly absorbed.
Stir in mozzarella cheese until melted and creamy.
Season with salt and pepper to taste.
Garnish with fresh basil and serve warm.
