Ingredients

Large Egg Separated

Lemon juice - 1 Tbsp (~1/2 a lemon)

Dijon mustard - 1 tsp

Garlic Clove, minced

vegetable/canola/Avocado oil - 1 Cup

Kosher Salt

Directions

IN BLENDING VESSEL (slightly larger than head of blender)

Egg Yolk (separate)

Lemon Juice

Mustard

OPTIONAL:

Garlic

NOTE: If the mixture does not reach the blades, double the recipe before attempting.

Pour oil on top and allow to settle

Head of immersion blender at bottom of cup - HIGH SPEED

--------------------------------------------------------------------

Do not pulse or move the head. As mayonnaise forms, slowly tilt and lift the head of the immersion blender until all oil is emulsified.

Season mayonnaise to taste with salt.

Refrigerate in an airtight container - >2 weeks
