1 rotisserie chicken
1 onion
1 knob of ginger
1 pho spice packet
4 quarts of water
1/4 cup fish sauce
1 piece of rock sugar
Pack of pho noodles
Toppings:
Cilantro
Limes
Onions
Jalapenos
Spicy chili oil
Basil
Bean sprouts
Directions
Roast onion and ginger under broil until slightly darkened. Shred rotisserie chicken and keep all bones. Toast spice mix in a pan until fragrant and put in mesh spice bag. Combine water, onions, ginger, spice bag, fish sauce, and chicken carcass in a larger pot. Bring to a boil, once boiling lower to a simmer and simmer for 45+ minutes.
Cook pho noodles according to package. Prep toppings and assemble.
