Ground Turkey Teriyaki Rice Bowls

1 lb ground turkey
1 tbsp sesame oil
1 tbsp minced garlic
2 tsp minced ginger
1 bunch green onion, chopped finely
1 cup brown rice, dry
3 cups chopped broccoli
Salt
Pepper
1/2 cup water
3 tbsp soy sauce
2 tbsp light brown sugar
1 tbsp rice wine vinegar
1 tbsp corn starch
2 tbsp water
Directions
Start by preparing the brown rice according to the package directions.
Next prepare the broccoli however you’d like. I recommend a simple sauté or steam.
Add the water, soy sauce, light brown sugar, and rice wine vinegar to a medium bowl for the teriyaki sauce. Combine. Set aside.
In a separate small bowl combine the corn starch and water for the corn starch slurry. Set aside.
Next add the oil, minced garlic, minced ginger, and the white parts of the green onion to a large skillet or pan on the stove over medium-high heat. Sauté for 2-3 minutes until fragrant.
Add the ground turkey to the skillet. Season with salt and pepper. Cook until the turkey is cooked through, about 5-7 minutes. Be careful to not overcook, this will dry out the turkey.
Pour teriyaki sauce and the cornstarch mixture into the skillet. Combine. Simmer until the sauce has reached your desired thickness.
Assemble the bowls with the cooked brown rice, cooked broccoli, and ground turkey teriyaki. Garnish with sesame seeds and the green parts of the green onion.
Serve and enjoy!
