Carrot Cake

2 cups all-purpose flour
2 tsp baking soda
2 tsp cinnamon
½ tsp salt
3 eggs
¾ cup vegetable oil
2 cups sugar
2 tsp vanilla extract
½ cup crushed or well-diced pineapple. Recipe calls for 8 oz can
1 ½ - 1 ¾ cups grated carrots. Do not use more. Causes cake to fall after cooling.
Cream cheese frosting:
1 stick butter
1 8 oz package cream cheese
1 tsp vanilla extract
1 tsp orange juice
1 3/4 - 2 cups powdered sugar
Beat ingredients together.
Directions
1. Preheat oven to 350
2. Prepare 2 9" round cake pans. Line bottom with parchment pa inside.
3. Sift flour, baking soda, cinnamon and salt together.
4. In large bowl, beat eggs and sugar till light and frothy.
5. Add oil and vanilla. Beat well.
6. Mix in flour mixture, pineapple and carrots. Stir and mix well.
7. Pour into pans. Bake 33 min on center rack. Test for doneness
8. Cool for 10 min. Turn out of pans onto cooling rack.
9. Frost with cream cheese frosting. Use lots of frosting in middle
