1 cup (152.25 grams) Arrowhead Mills All-Purpose Flour
1/2 packet (about 1 1/8 tsp) active dry yeast
1/2 tsp salt
1/2 cup (125 ml) lukewarm water
3/4 tbsp olive oil
Topping:
3/4 tbsp butter, melted
1/4 minced garlic clove
1/2 tbsp chopped fresh herbs
2 tbsp shredded nondairy cheese
1/2 to 1 jalapeño, sliced
Directions
Mix the dry ingredients (flour, yeast, and salt), then add the water. Form into a dough ball using the olive oil. Cover and let the dough rise in a warm place overnight.
Preheat the oven to 450°F (232°C).
Prepare the toppings by mixing the melted butter with the fresh herbs. Set aside.
Punch down the dough. Divide the dough into about 3-4 muffins depending on the size of your muffin tin. Place in a highly greased muffin tin and let rest for one hour.
Apply the garlic butter mixture, sprinkle with cheese, and create dimples in the dough.
Add more cheese and top with jalapeño slices.
Bake for about 15-20 minutes or until golden brown.
