Filipino Coconut Pork Adobo

Ingredients

2 tbsp of vegetable oil

500g of pork belly

1/2 onion, chopped

4 cloves of garlic, chopped

1/4 cup of white vinegar

1/4 cup of soy sauce

2 bay leaves

2 tsp of black peppercorns

1 chicken cube

1 cup of water

1 tbsp of brown sugar

1 cup of coconut milk

Directions

Bring a pot to medium-high heat and sauté the garlic and onion until fragrant for 1 minute in hot oil.

Add the pork belly and sear on all sides until brown on high heat.

Pour in the white vinegar, soy sauce, bay leaf, black peppercorns, chicken cube and organic water

Bring this to a boil over high heat and turn the heat to low or to a simmer until the sauce is reduced.

Add the brown sugar, coconut milk and give it a good mix until the sauce has thickened.

Once it is done, serve with hot steamed rice and enjoy!
