Black Bean Brownies

Ingredients

1 (15-oz) can black beans, drained and rinsed very well

2 tbsp cocoa powder

1 packet maple and brown sugar instant oatmeal

1/4 tsp salt

1/2 cup agave syrup

3-4 tbsp coconut oil (4 tbsp for fudgier brownies)

2 tsp pure vanilla extract

1/2 tsp baking powder

1/2 to 2/3 cup chocolate chips (optional, more for topping)

Directions

Preheat oven to 350°F. Combine all ingredients except chips in a food processor and blend until completely smooth. Stir in chips, then pour into a greased 8x8 pan.

Bake for 20-25 mins. Let cool at least 10 mins before cutting. Place in fridge if too soft; they will firm up. Makes 9-12 brownies.

Notes

Optional extra chocolate chips for presentation.
