Chicken Burrito Bowl

1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
1 1.25oz package taco seasoning
1.5 cups chicken broth
1 15oz can corn kernels, drained
1 15oz can black beans, drained and rinsed
1.5 cups salsa, homemade or store-bought
1 4.5oz can chopped green chiles
4 diced habanero peppers
1 whole onion diced
5-6 cloves of garlic
2 cups rice
1 cup shredded Mexican blend cheese
Directions
1. Add garlic, onion, and habanero to pressure cooker along with a dash of oil for 3-4 minutes
2. Add chicken and allow to cook for 4 minutes
3. Add taco seasoning and salt/pepper if desired. Use spatula to further break up the chicken chunks and stir until chicken is fully cooked roughly 4 minutes more
4. Add chicken broth and scrape the bottom of the pot to deglaze it
5. Stir in corn, black beans, salsa and green chiles.
6. Without stirring add rice, gently spread the rice around until it is all just submerged in liquid
7. Select manual setting; adjust pressure to high, and set time for 10 minutes. When finished cooking allow pressure to release naturally.
8. Stir in cheese until melted then serve
Goes well with corn chips if you aren’t in a healthy mood
