Grinder Bean Salad

1/3 cup olive oil
1/4 cup red wine vinegar
2 tablespoons lemon juice
1 1/2 teaspoons Italian seasoning
1 large garlic clove,
salt and freshly ground black pepper to taste
1 (15.5-ounce) can cannellini beans, drained and rinsed
1 (15.5-ounce) can garbanzo beans, drained and rinsed
1 cup mozzarella pearls
2/3 cup red bell pepper
1/3 cup red onion
1/3 cup pepperoncini
1/3 cup salami
1/3 cup capicola (optional)
1/3 cup fresh basil
Directions
Whisk together olive oil, red wine vinegar, lemon juice, Italian seasoning, garlic, salt, and pepper in a small bowl; set dressing aside.
Combine cannellini beans, garbanzos, mozzarella pearls, red bell pepper, red onion, pepperoncini, salami, capicola, and basil in a large bowl. Pour dressing over salad, toss until well combined. Flavor improves with refrigeration.
