Chocolate Pudding

◦1 cup Dark Chocolate
◦1 cup Heavy Cream
◦1 cup Whole Milk
◦6pc Egg Yolk
◦1/4 cup Sugar
◦3/4 tsp Kosher Salt
Directions
1. Place Chocolate in medium bowl and set aside.
2. Bring cream and milk to a simmer in a saucepan and remove from heat.
3. Vigorously whisk egg yolks and sugar in medium bowl until mixture turns a pale-yellow color and sugar is dissolved
4. gradually pour cream hot cream mixture into egg yolk mixture whisking vigorously. Pour into saucepan and cook over medium heat stirring constantly until mixture reads at 175 degrees F.
5. Pour over chocolate and let stand for 5 minutes
6. whisk mixture until combined and pour into mason jar to set. chill until firm (at least one hour
