Loaded Baked Potato Soup

Ingredients

1 can chicken broth (14.5oz)

3 medium potatoes

2 green onions, chopped

1/2 stalk of celery, chopped

1/2 large carrot, chopped

2 tsp white vinegar

1 tsp salt

1/2 cup cheddar cheese, shredded

6 slices cooked bacon

Thickener:

1 and 1/2 cups whole milk or half and half

2 Tbls flour

Optional bowl toppings: shredded cheddar, crumbled bacon, chopped green onion, or sour cream

Directions

Bring first 7 ingredients to a boil over medium heat and simmer 30 minutes or until potatoes are tender.

Mix the thickener ingredients together in separate bowl until no lumps remain and then whisk into soup.

Simmer 5 more minutes until soup is thick and bubbly.

Add the shredded cheddar and crumbled bacon.

Serve in bowls with additional toppings.
