Thai Red Dumpling Soup

Ingredients

Thai Red Ginger Dumpling Curry

1 tbsp olive oil

2 tbsp crushed ginger

2 tbsp red curry paste

30 dumplings

1 tin coconut milk

400ml veggie stock

1 lemon

Chilli oil (optional)

Coriander (optional)

Directions

Add olive oil, ginger and curry paste to a pot on a medium heat and mix well.

Add in your dumplings and mix until coated.

Pour in your coconut milk and stock then cover to cook for 5-10 mins or until dumplings are cooked through.

Dice coriander for garnish if using.

Remove from the heat, squeeze over the lemon juice, drizzle on chilli oil and garnish with coriander.
