Lucy´s Croquettas

1lb ham, chicken, beef, pork, or fish
1 medium onion (for all but the ham)
Salt And Ground Black Pepper to taste
parsley (for fish only)
1 tblsp Flour
½ cup milk
2 tblsp butter
eggs
plain bread cumbs
light olive oil for frying
1 lemon (for chicken and fish)
Directions
1. Heat butter flour and milk to make a Bechamel sauce
2. Stir constantly until thick and mixture coats back of a wooden spoon without dripping off spoon
3. Add ground meat, salt and ground black pepper and heat for about 5 minutes
4. Chill mixture overnight (to chicken and fish mixtures add a few squeezes of lemon)
5. Starting with 2 eggs, scramble eggs and pour into shallow dish. Pour about 1 cup of bread crumbs into another shallow dish
6. Form chilled meat mixture into small (approx 3 inches) croquettas (shaped like fat sausage links)
7. Roll croquettas into scrambled eggs, then into bread crumbs and roll until well coated. Repeat with all croquettas
8. Fry croquettas in small amount of oil or deep fryer until crisp and golden brown.
