Miso Butter Onion Linguine

Ingredients

  • 150g pasta

  • 2 onions thinly sliced

  • Butter (could use plant based)

  • 2 tbsp olive oil

  • 3 garlic cloves

  • salt

  • 1 tsp sugar

  • 1.5 tsp miso

  • 1 tbsp chilli flakes

  • 40g grated Parmesan or nooch

  • pepper

  • Chives

Directions

  1. Cook your onions in the olive oil and butter on medium high heat for around 15 mins

  2. add in your garlic, salt and sugar and keep frying until you’re happy with the caramelisation

  3. get your pasta onion and cook to al dente, reserving the pasta water

  4. add your miso, chilli flakes and some pasta water to your onions and give it a mix

  5. add your pasta and grated Parmesan and use pasta water till your desired consistency
