Chilli Peanut Noodles

Ingredients

100g of noodles of your choice, boiled

2 tbsp smooth peanut butter

2 tbsp light soy sauce

1 tsp dark soy sauce

1 tbsp chilli oil

1 tbsp sesame oil

1/2 tsp chilli flakes (adjust to your spice level)

1 tbsp brown sugar

4 tbsp noodle water

2 cloves garlic, minced

1/4 cup hot water (reserved from cooking the noodles)

Optional garnishes: chopped green onions, sesame seeds, crushed peanuts, fresh cilantro

Directions

Instructions:

1. Cook the Noodles:

  • Bring a pot of salted water to a boil. Add the noodles and cook according to the package instructions until al dente.

  • Before draining, reserve about 1/4 cup of the hot noodle water. Drain the noodles and set aside.

2. Prepare the Sauce:

  • In a mixing bowl, combine the peanut butter, soy sauce, rice vinegar, chili oil, sesame oil, sugar, and minced garlic.

  • Gradually add the reserved hot noodle water to the mixture, whisking continuously until the sauce becomes smooth and creamy. Adjust the consistency by adding more water if necessary.

3. Combine Noodles and Sauce:

  • Add the cooked noodles to the bowl with the peanut sauce. Toss thoroughly to ensure the noodles are evenly coated with the sauce.

4. Serve:

  • Transfer the coated noodles to serving bowls.

  • Garnish with chopped green onions, sesame seeds, crushed peanuts, and fresh cilantro, if desired.
