Quick Pasta E Fagioli

1 onion or 2 shallots, finely chopped
1 celery stick, finely chopped
2 carrots, finely chopped
3-4 garlic cloves
2 tablespoons tomato paste
2 x 15 oz or 400 g can of beans of choice, I used butter beans and cannellini, drained and rinsed
2 cups pasta of choice, I used orecchiette
1 L or 4 cups vegetable stock
A bunch of fresh spinach, or any leafy green
1 teaspoon cayenne
Salt, pepper
Cheese for garnish
Olive oil
Directions
Heat a drizzle of olive oil in a medium pot on medium heat. Sauté the onion, carrots, and celery for 5 minutes. Add the garlic and tomato paste and sauté for 3 more minutes.
Add a big pinch of salt, pepper and 1 teaspoon cayenne. Add in the beans, pasta and 4 cups or 1 L vegetable stock.
Simmer everything 3 minutes less than what the pasta packaging calls for. 3 minutes before the pasta is done cooking, add in the spinach or leafy green of choice, cover the pot with a lid and turn the heat off.
Let it steam for 5 minutes, then serve. The pasta should be fully cooked at this point. If not, simmer as much as necessary.
