High Protein Tater Tot Hotdish

Directions

Preheat your oven to 350°F and lightly grease a 9x13-inch glass baking dish.

While the oven heats up, remove the skin from the rotisserie chicken and shred or chop the meat. Set aside. (Can do this ahead of time).

In a large bowl, mix together Greek yogurt, cream of chicken soup, cheddar cheese, and all the spices until well combined.

Add the shredded chicken and stir to incorporate.

Finally, gently fold in the frozen tater tots, reserving a few for the top.

Transfer the mixture to the prepared baking dish and bake for 50 minutes. If you reserved tater tots for the top, ensure they turn golden brown during baking.

Optional: While the casserole bakes, fry up a few bacon strips in a pan and crumble. Once the casserole is done, remove it from the oven and top with crumbled bacon and chopped green onions.

Serve with a side of high-fiber veggies such as peas, edamame, or asparagus for a well-rounded meal.

Ps. When I moved to the Midwest and a client told me they had “hotdish” for dinner I was like “okayyyy?” So it’s hot, but what’s in it?🤣
