Tomato Soup

Ingredients

7 tomatoes

about 3/4 onion

2 heads garlic

1 bell pepper

1 cup vegetable broth

about 2 tbsp tomato paste

basil

thyme

olive oil

I cut up at the ingredients and tossed in some olive oil. I cut the garlic in half and made sure to pour some olive oil on those and sprinkle with salt and pepper. I used salt, pepper, garlic powder, red pepper flakes, and a little bit of onion powder on all the veggies.

Roast in oven at 425 for 45 min. Then I took them out with tongs and put them in a blender! The garlic should just squeeze out! Put the mixture in my dutch oven (or large pot) added a little bit more seasoning and heavy cream (about half a cup?? i eyeballed it) I also combined the tomato paste and vegetable broth then added that as well!

Serve with grilled cheese and enjoy 😊
