Healthy Chocolate Chip Cookie Skillets

Ingredients

1 cup cashew butter

1/4 cup coconut sugar

1/4 cup maple syrup

1/2 tsp vanilla bean paste

1 cup almond flour

1 tsp baking powder

1/2 tsp salt

1/2 cup chocolate chips

Directions

Preheat your oven to 350°F. Spray two mini cast iron skillets (8.5 inch) or one medium cast iron skillet with avocado oil. Set aside.

In a medium mixing bowl, combine the almond flour, baking powder, salt, coconut sugar, cashew butter, maple syrup, and vanilla bean paste. Mix with a rubber spatcula until you have a nice, thick dough and all of the ingredients are fully incorporated.

Fold in the chocolate chips.

Press the cookie dough (dividing evenly) into your cast iron skillet(s).

Bake for 15-20 minutes (15 minutes for a more gooey cookie). Top with some ice cream for the ultimate dessert. Enjoy!
