Ingredients

2 cups white wine vinegar

2 cups rice vinegar

2 tablespoons yellow curry paste

1 tablespoon garlic, chopped

¼cup coconut sugar

1 teaspoon black peppercorns

2 keifer lime leaves

Salt to taste

8 cups finely diced veggies (Kale stems, Zucchini, onion, carrot, cilantro stems, cucumber, squash, peppers, green onion, parsley stems, etc)

Directions

Bring brine ingredients to a boil then pour over veggies. Let cool and store
