Ingredients

Chicken breast

Bell pepper

Broccoli

1 tin Curry paste (114g)

1 can Coconut milk

2 tbsp Peanut butter

2 tbsp Sugar

Directions

Steam rice, add half coconut milk for coconut rice

In a large saucepan with cooking oil sauté peppers and broccoli

In separate saucepan heat curry paste on medium heat

Add peanut butter to curry paste and mix

Add chicken and mix with curry paste and cook through

Add coconut milk

Add sugar

Add in vegetables

Serve over rice

Notes

Vegetables interchangeable and subject to your own preferences for quantity
