Kayli's Breakfast Burritos

Ingredients

2 eggs per burrito

Splash of milk (maybe a tablespoon) for every 2 eggs you use

1-1/12 piece of bacon per burrito, chopped

1-1 1/2 breakfast sausage per burrito, chopped

Finely diced onions, bell peppers and garlic

Salt and pepper

Extra virgin olive oil or butter

Shredded cheddar cheese

Optional: hashbrowns (I didn't put them in the Fish Lake burritos but it's good if you want to - I always make them from scratch by cutting the potatoes in small cubes and sauteing them in oil and adding salt and pepper)

11-12 flour tortillas (We like the Tortilla Land Brand)

Directions

Cook the bacon, sausage and hashbrowns and set aside to cool.

Saute finely diced onions and bell peppers until soft. Add the garlic and cook for another 30-60 seconds until fragrant, but DO NOT BROWN THE GARLIC or else you'll need to start completely over with a clean pan.

Crack the eggs and whisk them together with the milk. Add a couple pinches of salt and pepper (depending on how many you make.)

Make sure you have some butter or some more oil in the pan and then add the eggs at medium-low heat with the peppers, onions and garlic.

Stir continuously/scramble until they start to set up but they're still plenty wet.

Add the bacon, sausage in chunks, hashbrowns and cheese and stir until completely combined with the eggs.

Once the eggs are almost completely dry and cooked to your desired done-ness, take them off the heat and let them cool slightly (unless you'll be eating the burritos right away.)

Add the mixture to each tortilla (don't wrap them up until you have all the burritos all evenly filled.)

Roll them up and store in the fridge for 4-5 days.

When you're ready to eat them, preheat the oven to 350 degrees and put the burritos in for about 25-30 minutes.

For extra delicious results, take them out of the foil and put them onto a baking sheet so the tortilla gets nice and crispy and then take them out once they're browned, about 15-20 minutes.

**Ya I think so! All thawed and with the oven preheated, I’d probably do 20ish minutes unwrapped. If you put them in while the oven is preheating it’s probably closer to 25-30.

Notes

Little bit dry -- maybe add more flavor too?
