Honey Almond Slice

Ingredients

For the base:

100 g (3½ oz) unsalted butter

60 g (2 oz) light brown sugar

115 g (4 oz) plain flour

60 g (2 oz) almond meal

For the topping:

80 g (2¾ oz) unsalted butter

60 g (2 oz) honey

85 g (3 oz) flaked almonds

Directions

Preheat the oven to 170°C (375°F). Grease and line a 20 cm (8) square baking tin with baking paper, ensuring two sides overhang for easy removal.

Place the butter in a large microwave-safe bowl and heat in 20-second intervals until melted.

Add the sugar, flour and almond meal to the melted butter and mix with a wooden spoon until combined

Place the mixture into the prepared tin and use the back of a metal spoon or base of a glass to firmly press down and ensure it is even.

Bake for 12 minutes until lightly golden.

Meanwhile, heat the butter and honey for the topping in a microwave-safe bowl until melted. Stir the flaked almonds through the mixture and spread over the base.

Bake for a further 15 minutes until lightly golden. Remove from the oven and allow to cool completely before slicing.
