Squash Casserole

Ingredients

3-4 cups cooked squash

1 medium onion, chopped

2 eggs

1 can condensed mushroom soup

2 cups grated cheddar cheese

Ritz crackers, crumbled

1 stick of butter

Directions

1. Preheat oven to 325°F.

2. Boil squash and onions until tender; drain.

3. Add slightly beaten eggs, mushroom soup, and cheese to the cooked squash and onions.

4. Pour mixture into a greased casserole dish.

5. Top with crumbled Ritz crackers and drizzle with melted butter.

6. Bake for about 45 minutes or until the top is browned.
