Prep
Preheat oven to 350 degrees F. Grease muffin tins with coconut oil.
Muffins
- Combine melted butter and sugar in a medium bowl. Whisk until smooth and fluffy. 
- Next, add in the eggs and whisk well. 
- Add in coconut milk and vanilla. Whisk until combined. 
- In a separate bowl combine baking powder, flour, and salt. Mix well. 
- In a large bowl add in your dry mixture into the butter mixture and whisk until smooth. You can also add it all to a bowl of a stand mixer and mix. 
- Fill the prepared muffin tin 3/4 full with batter. This is about 1/4 cup of batter per muffin cup. 
- Sprinkle coconut on top. 
- Bake for 35-40 minutes until golden brown. For a chewy center take out at 35 minutes. 
- Once done, let it cool in the pan for 10 minutes. Then remove from and place on a cooling wire rack to cool completely. 
- Sprinkle with more coconut for the perfect muffin and enjoy! 
- For the best results, be sure to use mochiko flour for this recipe.
