Prep

Preheat oven to 350 degrees F. Grease muffin tins with coconut oil.

Muffins

  • Combine melted butter and sugar in a medium bowl. Whisk until smooth and fluffy.

  • Next, add in the eggs and whisk well.

  • Add in coconut milk and vanilla. Whisk until combined.

  • In a separate bowl combine baking powder, flour, and salt. Mix well.

  • In a large bowl add in your dry mixture into the butter mixture and whisk until smooth. You can also add it all to a bowl of a stand mixer and mix.

  • Fill the prepared muffin tin 3/4 full with batter. This is about 1/4 cup of batter per muffin cup.

  • Sprinkle coconut on top.

  • Bake for 35-40 minutes until golden brown. For a chewy center take out at 35 minutes.

  • Once done, let it cool in the pan for 10 minutes. Then remove from and place on a cooling wire rack to cool completely.

  • Sprinkle with more coconut for the perfect muffin and enjoy!

  • For the best results, be sure to use mochiko flour for this recipe.
