Asian Pork Dumplings

• 2 Tbsp olive oil
• 1lb mild ground sausage
• 1 small onion, diced
• 2 cups bok choy or other greens, chopped
• 7 cloves garlic, minced
• 1 Tbsp ginger, minced
• 3 Tbsp Zhenjiang vinegar (or rice vinegar)
• 3 Tbsp fish sauce
• 3 Tbsp low-sodium soy sauce
• 1 tsp sesame oil
Instrucțiuni
Heat olive oil in skillet and cook ground suasage over medium-high heat until browned, making sure to crumble the meat as it cooks.
Add diced onion and cook until starting to soften, then add bok choy or other greens and cook until soft.
Add remaining ingredients, allowing mixture to simmer until heated through.
Allow to cool just enough that the mixture doesn't melt/burn a hole through the wraps, then roll away.
Cook fresh dumplings with your preferred method, or freeze for later.
Note
From Rachel: I often use Shanghai bok choy sum which has a stronger flavor, but you could use regular bok choy, cabbage, or even spinach. If using bok choy, remove the toughest stem bases as those often don’t soften well. Rice vinegar can be used in place of Zhenjiang; however, Zhenjiang has a heavier flavor great for dumplings and sauces.
