Larry’s cottage Pie

1.5 lbs ground beef
4 cups white onion
2 cups chopped celery
2 cups carrots
2 cloves finely chopped garlic
A pinch crushed red pepper
2oz tomato paste
0.5 cup all purpose flour
2 cups beef stock
2 Oz pure olive oil
Salt and pepper
Cheddar cheese
Mashed potatoes

Heat the oil in a thick bottomed pot or pan. Add the beef and a little salt and pepper and stir on high heat until brown. Remove the beef from the pot and place in a colander to allow the fat to drain. Meanwhile return the pot to the heat - lower the heat and add in the onions, carrots, celery and garlic. Stir constantly until soft. Return the beef to the pot. Stir in crushed red pepper and tomato paste then add the flour and continue stirring for a few minutes to cook the flour. Add stock - stir constantly to a simmer. Lower heat, add a little more salt and pepper, cover pot and allow to cook for about 30 minutes stirring accasionally to prevent sticking on the bottom. After 30 minutes taste for seasoning. Remove from heat and pour into a baking dish. Top with sliced or grated cheddar cheese and allow to cool. Once cooled it can be refridgerated for up to 24 hours or until ready to use. Once ready to be baked top with hot mashed potatoes and bake in a 350 degree oven for about 30 minutes or until golden brown.
