RayRay’s Ginger Stir Fry

1–2 c rice
1 Tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
2 heads broccoli, chopped
8 oz mushrooms, chopped
1 bunch green onions, sliced and divided
Few inch piece ginger, grated
1/3 c brown sugar (to taste)
Optional: peanuts or cashews
Sauce
2/3 c broth (I used onion, but any broth will do)
4 tsp corn starch
4 Tbsp fish sauce
2 Tbsp oyster sauce
2 Tbsp soy sauce
1 Tbsp rice vinegar
2 tsp hoisin sauce
2 tsp sesame oil (see notes!)
2 tsp sambal oelek (to taste)
Instrucțiuni
Cook rice according to package instructions.
Heat oil in large skillet over medium-high heat. Add onion and cook until softening.
Add garlic and mushrooms, cooking until mushrooms soften.
While vegetables are cooking, whisk sauce ingredients together. Start slowly, adding broth to corn starch in small amounts to make a paste. When starch is dissolved you can be faster dumping in the other sauce ingredients.
Add broccoli, sauce, ginger, and sugar to cooking vegetables. Also add the basal half of the green onions, cooking the dish until broccoli begins to soften.
Serve immediately on rice, sprinkling with the sliced top half of the green onions.
Optional: If using peanuts, add at step 5 or sprinkle on top at end.

Disclaimer: I threw this together without paying attention. We decided it tasted as good as ginger dishes in Thai restaurants so I’m trying to recall approximately what I did. Work in progress!
Sesame oil can really move the bowels so keep that in mind and add less or more as needed 😄
