2 medium sweet potatoes, peeled and diced
2 bell peppers, ideally different colors, de-seeded and sliced
2 red onions, sliced
¾-1 packet fajita seasoning
1 (15-oz) can chickpeas (garbanzo beans), rinsed
Sliced or shredded cheese (any kind, but medium or sharp cheddar are yummy here)
Instrucțiuni
Preheat oven to 400°F.
Put sweet potatoes on parchment-lined pan, drizzle with ½ tsp olive oil, and bake for 15 minutes.
Mix peppers, onions, fajita seasoning, and remaining 2½ tsp oil in a bowl.
After sweet potatoes have been cooking 15 minutes, add pepper mixture to tray, stir, and bake another 20 minutes.
Add chickpeas to tray, stir, and bake 2-3 more minute.
Place tortillas topped with cheese slices on top of mixture and bake until cheese melts (1-2 minutes).
Spoon pepper/chickpea mixture onto the cheesy tortillas and serve.
Note
From Jenn:
This recipe can be altered in numerous ways, including adding tofu, shredded chicken, tomatoes, spinach, cojita cheese, etc., and it even tastes great without the onions.
Jenn edit: I started cooking the chickpeas the same length of time as the peppers rather than adding them at the end. I think I like it better because they get crispier.
The original recipe suggested serving over rice or with a side of coconut yogurt, but I haven't tried either as I found it great as-is.
From Rachel:
This is now a go-to recipe for me. I frequently omit chickpeas and add regular potatoes (diced and cooked along with sweet potatoes). So many variations, so easy, so good.
