Marry Me Chicken Gnocchi Soup

1 tbsp oil (I use @algaecookingclub)
1 lb chicken breasts (seasoned with salt, pepper, onion powder, garlic, powder, smoked paprika, and Italian seasoning)
1 medium onion, diced
2 stalks celery, diced
2 medium carrots, diced
Salt and pepper, to taste
1 tsp smoked paprika
2 tsp Italian seasoning
4 cloves garlic, minced (to tase)
1 tsp calabrian chilies (optional)
3 tbsp tomato paste
1/2 cup dry white wine (optional)
6 cups low-sodium chicken broth
Parmesan rind (optional)
1 cup freshly grated parmesan cheese
1/2 cup sun-dried tomatoes (in oil), julienned
1 cup heavy cream (or half & half), room temp
1 lb potato gnocchi
2 handfuls fresh spinach or kale
Handful of torn basil (optional)
Garnish: parmesan cheese, red pepper flakes, fresh basil
what should I make next?
Instrucțiuni
1. Add oil to the pan. Sear the chicken five minutes each side. Remove.
2. Add sun-dried tomato oil to pan and onions, carrots, celery for five minutes
3. Make an opening in the center in tomato paste and cook for two minutes.
4. Add white wine and sun-dried tomatoes and deglaze pan.
5. Add chicken and Parmesan bring to a boil. Cover and simmer five minutes.
6. Remove chicken and rind. Shredchicken. Add heavy cream and gnocchi and chicken to pan and cook until gnocchi is ready.
7. Add basil, spinach, and Parmesan.
