Chocolate Chip Cookie Dough Cups

For the Crust:
1½ cups crushed chocolate sandwich cookies (like Oreos)
4 tablespoons melted butter
For the Chocolate Layer:
1 cup semi-sweet chocolate chips
2 tablespoons heavy cream
For the Cookie Dough Layer:
½ cup unsalted butter, softened
½ cup brown sugar
2 tablespoons granulated sugar
2 tablespoons milk
1 teaspoon vanilla extract
1 cup all-purpose flour (heat-treated if needed)
½ cup mini chocolate chips

Prepare the Crust:
Line a 12-cup muffin tin with cupcake liners. In a bowl, mix crushed cookies and melted butter. Press about 1–2 tablespoons of the mixture into the bottom of each liner. Chill in the fridge for 10–15 minutes until firm.
Make the Chocolate Layer:
In a microwave-safe bowl, combine the chocolate chips and cream. Microwave in 20-second intervals, stirring until melted and smooth. Spoon a layer of chocolate over each chilled crust. Chill again to set.
Prepare the Cookie Dough:
In a bowl, cream the softened butter with brown sugar and granulated sugar. Add milk and vanilla extract, then mix in the flour (make sure it’s heat-treated to be safe for no-bake recipes). Stir in the mini chocolate chips.
Assemble the Cups:
Scoop and flatten a tablespoon of cookie dough over each chocolate layer, gently pressing it down. Smooth the tops with a spoon or clean fingers.
Chill & Serve:
Refrigerate the cookie dough cups for at least 30 minutes before serving. Keep stored in an airtight container in the fridge for up to 5 days.
