Carrot Cookies

Ingrediencie

1 cup sugar

1 egg

3/4 cup butter

1 cup cooked mashed carrots

2 cups flour

1/2 tsp salt

2 tsp baking powder

1 tsp vanilla

For Orange Frosting:

1/2 package confectionery sugar (2 cups)

2 Tbsp melted butter

3 Tbsp orange juice

1 Tbsp grated orange rind

Preheat oven to 375°F. Mix sugar, egg, shortening, and carrots in a large bowl. Add flour, salt, baking powder, and vanilla. Drop by spoonfuls on a greased cookie sheet. Bake for 10-12 minutes.

For Frosting: Mix all frosting ingredients well and spread over cooled cookies.
