Hummus Bowls

INGREDIENTS

Hummus

1 can chickpeas, drained and rinsed

¼ cup lemon juice

3 cloves garlic

½ cup tahini

2-4 tbsp ice water, to taste

½ tsp cumin

1 tbsp olive oil

Instruktioner

1. Preheat oven to 425 degrees. Place spiced cauliflower on a foil-lined baking sheet and roast for 20-25 minutes.

2. Prepare brown rice according to package instructions.

While the cauliflower and rice cook, prepare the hummus. Combine lemon juice and garlic in a food processor and pulse. Add the tahini and blend until creamy, Drizzle in 2 tablespoons of ice water. Add the eumin, chickpeas, and olive oil and process until smooth.

4. Chop orange pepper and sweet onion into short strips and sauté until softened.

5. Dice cucumber, tomato, and avocado.

6. Top with banana peppers and feta cheese.
